OS X El Capitan boot issues

I'm on a 2009 Mac Pro, which should the explain the El Capitan. I've been trying to get it to boot into ElCap, but when I boot using my Vega 64s, it shows nothing at all. When I boot using the stock GT120, I can see the apple logo and progress bar, which is expected, but the progress bar will advance about 2/3 of the way, then the display signal will cut and I won't be able to see anything. I'm running 2x2.66GHz quad cores, 64GB of RAM, the GT120, & a 500GB HP SATA SSD as a boot drive. Any ideas as to what's going on?
