at a public cooking class, Green candidate for Ayrshire imnofox puts on a public vegan cooking class
"Hiya everyone, great to see you all. Today we're going to be making a sweet potato and white bean chilli. It's one of my favourite recipes, and it's definitely what I'll be eating on election night to celebrate what I hope will be a good win for the Greens!" says imnofox.
"On each of your stations, you'll see a beautiful woven basket containing all the ingredients you'll need for this recipe. In there are 2 medium sweet potatoes, 2 teaspoons of ground cinnamon, 1 tablespoon of ground cumin, 1 teaspoon of smoked paprika, 1 large onion, 1 bunch of fresh coriander, 1 fresh red chilli, 2 red peppers, 1 yellow pepper, a 400g tin of cannellini beans, and a 400g tin of tomatoes. Obviously there's are all fair trade products and/or locally grown." announces imnofox.
"Before we get started, just preheat your oven to 180 degrees Celsius. Now, I'm just gonna peel these potatoes, and then just chop them to about this size."
imnofox then places the chopped potato in the roasting ray, tossing 1 tablespoon of oil in with it along with a pinch of the cinnamon, a pinch of the cumin and a pinch of paprika
"Now we're just gonna put this tray of potatoes into the oven for about 35 to 40 minutes. While that roasts in there, it's time to deal with the rest of the vegetables."
imnofox begins to chop the peeled onions.
"Now I'm just picking the coriander leaves, and finely chopping the stalks." says imnofox, picking the coriander leaves and finely chopping the stalks.
"Now we've got to chop up the chilli- this doesn't have to be fine or uniform, just pretty roughly. Take the seeds out of the peppers, and we'll chop those up too".
imnofox moves to his frying pan, adding a tablespoon of oil, before tossing in the onion, coriander stalks, chilli, and peppers, before adding the remainder of the spices
"We're just going to cook these over a low heat for around 15 minutes, stirring them often" states imnofox, cooking the vegetables over a low heat for the next 15 minutes, stirring regularly.
"Cool, so now I'm going to empty this can of cannellini beans and the can of tomatoes into the pan- if it's a bit stiff in there, just add a splash of water. Just let that simmer for half an hour." continues imnofox.
imnofox takes the potatoes out of the oven, leaving them aside until the pan's finished
"Now I'm just going to stir in these potatoes into the pan, and I'm going to add most of these coriander leaves as well. You want to keep some of these leaves to garnish the top." says imnofox.
imnofox empties the pan onto a bed of rice, topping the dish with the remainder of the coriander leaves
"So that's how you make a quick and tasty vegan meal, that the whole family can enjoy." says imnofox.
