Sound synthesis being foiled by lingering piano tones.

Hi. I’m trying to synthesize various instrument sounds from scratch using the ES P plugin for a school project, but the piano sounds my MIDI was programmed with that I’ve been using thus far play along with the new, synthesized sounds. This week included seeeveral hours of instruction on various MIDI functions, but I can’t remember ever hearing anything about removing old instruments.. help?
