Breaks: Paid vs unPaid

I’m a service technician, and my schedule vary on a day to day basis anywhere from 7-10ish hrs. Whats the legality behind paid vs unpaid breaks. Some days I don’t get a break because of how busy we are and the days I do take a break I’m required to stay back longer to cover the break I took. If I work 10mins more than 8hrs am I entitled to the 3x 10mins paid break 1x 30mins unPaid break? What gets used first the paid break or unpaid?
