Tooling Question

I am doing my first belt and I was unable to finish in one session. Like I had seen in some videos of professionals with large projects (saddle maker) I put my still cased leather in a trash bag overnight so I could keep working the next day with just a little work.

My question is: if I need 12 to 24 hours before coming back to finish my work, should I put the cased (technically damp/not dry) leather in a bag just as i have, or am I better off letting it dry and casing the entire project (some already carved and tooled) again, when I'm ready?

Obviously I don't want water spots so I've been casing the entire project, but I also don't want mold.

And I'm curious about projects longer than the belt which may take many nights. -whats my best route?
