Playing with fingers (Or lack thereof) (Question)

Dear Learnmusic reddit,

I need some advice, i want to learn an instrument like the violin, viola, erhu or shamisen, or even harp, guzheng.

My problem is my left hand, i was electrocuted as a kid and well, save gruesome details, i'm missing : half my wedding ring finger (end is weird so it can't be used at all for anything intrustment wise), my middle finger won't bend and would be useless for grip/putting fine pressure on say a string, the left side can be used as a support for some wood etc. my little pinkey finger is not so bad, weak but it can hold things. the last finger next to thumb as well as thumb is perfectly fine and work very well (they've had to).

i don't know if i could play any of those instruments as well as i'd want to, if i were to play an instrument i'd want to master it, doesn't need to be playing complicated things but rather beautiful things, i live too far away to be able to go try them out in a store (live in middle of nowhere) so that is not an option.

my right hand is fine, i'm right handed.

I'd be grateful for any advice, I'm also willing to listen to any recommendations of any other instrument no matter how wild or different they may be.

I love jazz, Asian classical music and some classical music. (and maybe a tiney bit of folk music too)
