I was reading THIS article about Sushi and got confused on the part about types of Sushi restaurants.

One is easy. The Kaiten-sushi. In this shop, the guests serve themselves various things and a reservation is OK/good

Another one, a Japanese chef makes specialty Sushi in this shop. Normally, guests sit and dine side by side along a long, narrow table counter. Then, the chef requests what the guests would like to eat. The price is a little high. Popular shops require a reservation or you can't get in
