[Landlord - NC, USA] In an eviction filing, what counts as “proof of service”?

When serving a tenant their summons for eviction (or, summons for complaint in summary ejectment as called in North Carolina), is it necessary to serve the filed papers through the Sheriff's office?

An FAQ on the nccourts gov website said that it's acceptable to mail the filed court summons by registered/certified mail to the tenant. A returned USPS receipt showing the signature/delivery would be the "proof of service".

Does anyone know if this is correct?
