Iโve been making looseleaf tea for over a year and I will explain my method because Iโm sure someone will ask. I measure route 50 g of loose/crushed leaf tea, I squeeze the juice of two lemons and mix the tea in a pot with a little water until it is all wet and then I let it sit there for just a minute or two then I add a half gallon of filtered water and bring to a boil, reduce to a slow boil and let it do its thing covered for about an hour. After turning off the heat I add a few big ice cubes and stir until the ice melts and I strain it into a half gallon mason jar. I then repeat the process with only filtered water and only bring it to a boil and then add it to the half gallon mason jar until itโs full. With practice I usually do the main boil and one smaller one to get the desired volume.
This is a beautiful brown liquid with zero clumps or residue. I can run it through a 200 micron screen and catch very little.
But after it cools, a grit begins to form and sink.
It probably takes me three or four days unless my friends visit and by the fourth day the clumps are nasty. Yes I refrigerate it.
Anyone know what is coagulating? First picture is two half gallons warm and not coagulated yet. Second picture has shifted from a clear liquid to a more opaque substance. The third picture is what I am finding
