Defoliating to harden plant?

I waited so long that trying to harden my kratom plants isn't working. The leaves gave so much water that in the sun THEY ALLL sag into the dirt. All the way to almost halfway up plant. I was told if I defoliated and let the new leaves grow to the outside weather I might have better luck hardening gradually.

Question is do u cut the leaves off at stem? Or halfway between the stem and petiole where leaf attaches?
