Habe Rotkohl (oder wie ihr es nennt), suche was passendes (Twist: vegetarisch)

Habe von meinen Fermentierversuchen mit Rotkohl etwas Kohl übrig gehabt und das nun zu einem klassischen Rotkohl nach Art meiner Oma gekocht (mit Nelken, Lorbeer und schön viel Apfel... Jaja meine Oma kommt aus dem Rheinland. Bei uns heißt das Rotkohl genau wie das Gemüse). Nun stelle ich mich die Frage, was kann man passendes dazu machen, was a) genügend Protein enthält und b) vegetarisch ist.
Die 0815-Idee, Kartoffel (klöße) und Spiegelei, find ich jetzt nicht so lecker.
