Trying to get out of the corporate restaurant.

I've been doing this for 11 plus years now. I've been through both corporate and private businesses. With how things have been going, I want to still cook and serve, but don't want to open a brick and mortar establishment.
I'm wanting to open a food truck business and wonder if anyone has any advice or anything regarding it? I want to be in control of my business and have good plans established with where and when to make good money. TIA.
