So I've been in this industry for most of my life (33m), went through multiple sanitation certifications, servsafe, food safety, you get it. Why, for what ever reason, are health inspectors so vindictive sometimes? In my district for my restaurant, the inspector came in, with state mind you, for our inspection.
Take note if a few things; we had an inspection last September, she came three weeks ago this year. Some things that she said were fine, suddenly were very not fine. She had a retort for everything that I could explain that was within code.
This last inspection she came in and marked us for the biggest BS I have ever seen. Scrambled eggs that were out for less than 20 minutes, a fly trap that was next to the prep area, sanitizer buckets on the floor, pickle buckets on the floor, a paper towel dispenser that was just being changed caused a mark for inappropriate hand washing station. And not having a visible detailed exclusion/restrict sickness policy, which I explained that All staff knew and we had a zero policy for any of the exclusion mandates. All of these were corrected on site, within minutes. She never marked COS on any of them.
Then she marked ME as unknowledgeable about time temperature control, when we have them all over the kitchen as a redundancy, my entire staff is food safety certified. All of these culminated into a warning of closure and a $1000 fine.
I know state was with her, I get it. But all of these seemed superfluous and meaningless when we corrected everything.
So idk, am I making this bigger than it needs to be or have inspectors become more vindictive and hard ball about everything?
