I’m a little confused by Sympathy?

I just started The Name of the Wind, and one example used when describing how the magic was used was rubbing Lye on a feather to bring a bird down. Couldn’t he have bound the bird to the feather and just pulled down? I somewhat get the whole transferring heat from a stone by binding it to water, and the two not being compatible like the bird and the feather. But does binding something just transfer energy? Or can it be used to move objects?

I just finished Rhythm of War not too long ago so maybe my cosmere info is jumbling up my understanding of how magic is used in this series. Thanks!
