One of my favorites I decided to tweak and make low carb. The potatoes were the only culprit here. I replaced those with a whole head of blanched cauliflower. And it is so damn good. Carrots, celery , white and red onions. I usually put mushrooms but I was low on time. Definitely way better cooled and reheated. The meat I used was a venison shoulder roast braised in beer. But you can use whatever. The braising juice you use for the stew. I cook the onions and carrots separately so they arenโt mush. Also copious amounts of fresh garlic I add while pan searing the onions. Enjoy
