Delta V, and fuel, what does it take and how do you know?

so lately i have been watching scott manley's video on orbital mechanics on paper to try to better understand things, and be better at game. oh and school i guess. Well I was wondering what is Delta V, and how do you determine how much DV something has, as well how much do you need to get out into orbit and beyond. Similarly how do you determine how much fuel needed to get into orbit and beyond. Last but not least, i know your payload makes a difference in all of this, but how do you find how much the payload weights? and how much does this affect the dv needed?
