Just started a batch of milk kefir and I'm new to this... I put the grains in a jar and added 1/4 cup of organic pasteurized whole fat milk to it (I had the darnedest time finding organic non-pasteurized milk).
It's been 26 hours. There is sour smell coming from the jar. Has a twinge of a sharp alcohol-like smell. There's some yogurt-like stuff floating in the milk and some thicker stuff stuck to the bottom of the jar. I really don't know what I'm looking at...
How's my progress and what do I do from here? Do I mix it, strain it, and then pour some more milk in there? I'm almost afraid to disturb what's in the jar, especially the thick clumps in there...
