Observation: For 2F, does more fruit equate to more sour?

Hello. I noticed this thing for a month now.

For 2f, if I only use an inch of lemon or orange slice, the flavor becomes so rich and almost sweet.

But if i add more fruit like pineapple and blueberries (to increase sweet), it turns out to be rather sour always. Even if i dont let it overferment.

Is it because bacteria then has more sugars to feed on and convert them to sour acidic product???

Is there any to get a blueberry flavor that doesnt taste sour lol? I have blending blueberry for now. Should I just put the whole in ?
