Kefir grains and their ability to withstand adverse conditions??

Guys I cant understand how kefir grains may die if the milk quality is bad or if plant based milk is used, but not when they are dehydrated for however long periods of time????? HOW.
Can someone explain it to me?
Also how are they capable of reviving themselves after such long dehydrations? It interests me.
