Gulf Coast Recommendations Sought

I'm looking for a gulf coast (ish) spot to hit for some laid back solo kayaking with car camping and hiking (mediocre is fine) nearby. Planning on heading out next week for a week or so.

I'm absolutely fine just puttering around a bayou looking at birds and listening to the silence. Don't need to go fast or far. I just need to be outside.

I'm really very flexible on distance and location, just trying to stay as far south as possible to keep the temperature tolerable (and I love a good swamp). I'm looking for a measure of solitude, so dispersed camping is fine. I was initially hoping to avoid Florida, but I could be persuaded if there's a spot that won't be crowded.

I'm looking into De Soto National Forest right now. I know there are a lot of places that fit my bill and would love any recommendations. Thanks!
