Making a 10' kayak more stable for hunting

I am considering purchasing a used 10' pelican kayak to modify for hunting. One of the biggest concerns I have is stability while shooting. I know you can buy or build outriggers to help with stability, but I feel that they might get snagged on brush.

So, I am thinking about making pontoons and attaching them to the side of the hull. Has anyone tried this before, or do you have a suggestion, if so I would love to hear about it.
