So what do you actually build and when?

I know this is posted a lot but haven’t seen anything comprehensive or from most recent patch.
I’m trying to pick the champion up and getting used to mechanics but I’m confused what to build. I see crit, on hit, tank, AP and hybrid all used interchangeably.
Is there a generally good build I can just use as a learn? If not, and I’m supposed to rotate between all of these, when and why?
