Basic rundown of infinity: picture Gojo's infinity as a box that constantly surrounds him. What this box does basically is infinitely slow things down to the point that whatever he doesn't allow it to will never touch his body.
How the world slash made contact: What Sukuna learned from the "blueprint" that Mahoraga provided was not how to literally cut through space but instead he had learned how to target the area or space around Gojo himself. So basically he flung a 1000 degree, big ass knife through the air and Gojo AND the box got caught by the knife.
TLDR: What Sukuna meant by "cutting the world" was him not directly targeting Gojo with amped dismantle but instead he targeted the bit of space that would be covered by Infinity.
