Help with understanding standards

So I’ve been listening to jazz pretty heavily for several years, but I’ve recently decided to start learning jazz bass. So, I’ve been listening to Autumn Leaves cuz I’ve heard that’s a great starting place in terms of standards. My issue is that I’ve been listening to several different versions, and while some will sound pretty similar, others don’t sound remotely similar. For example the Bill Evans and a big band version I’ve heard are very similar, but the Nat King Cole version and Cannonball Adderely versions sound so different. Basically, can someone explain what I’m missing. Do I need to be better on my theoretical side? Hope I don’t sound like a total noob. Thanks!

I CAN hear the sorta similar refrain in some of them though.
