T-Rexes were alive for quite a long time. While no species can just "choose" its evolution, tooth shape does seem to change pretty quickly. They likely would have developed chewing teeth quickly or at least have started swallowing rocks.

Claiming that we can't predict their diet is just claiming that you know more than all the paleontologists...

It probably depends on how you define colonization, for one thing. In order to get to the closest system, we need spaceships that we can live on for a long time. But once we have that technology, we can pretty much start sending ships out everywhere, arrive at any system and start punching asteroids.
