Cold room roof insulation

I have build a peculiar cold room. These freezer panels I got for free so I just built a roof and floor the cold room and insulated the heck out of it. Now I’m a bit worried about condensation and how I did the roof and ceiling. I’m worried that the open air space between the ceiling and the roof is a good spot to collect moisture. It’s also sealed off from both the inside room and outside. Every gap there was should be covered by spray foam. Let me know what yall think. You should be able to see most of it with the pictures but let me know if it’s not clear.
