Insulating with foam overhead?

Hi all, my client wants me to insulate his elevated sunroof best I can. It's exposed to weather so my idea was to use 2" foam board and spray foam loctite or greatstuff around the panels to create an air seal.

Do you have any tips of how to spray the foam overhead where it won't just fall down due to gravity, and will it be possible to spray the foam without the bottle upside down considering I don't have the clearance?

What would you do here for a budget friendly insulation that is exposed to weather?
