My pav bhaji is a really ugly color?

Title says it all, lol... I don't understand how people online are getting brown pav bhaji based on its ingredients, or even red, since most of the dish is the veg and not tomato... right? I followed a well-rated online recipe pretty closely, adjusting certain amounts to my liking, and mine is an ugly grey/brown color while the pic is a nice brown...
