This might be an Indian dish that most of you like best and tried the most (just from what I have seen so far in this community). And of course, most of you might be knowing the best recipe to make at home. I'm just sharing my recipe that I felt is straight-forward to prepare for me. As a south indian, butter chicken is a new dish in our home. I have tried out many butter chicken recipes to get a recipe that we liked best.
Recipe -
Ingredients::
For marinade -
• Boneless chicken washed and cut (around 2 lb)
• Kashmiri red chilly powder - 2.5 tbsp
• Ginger garlic paste - 2 tsp
• Salt
For curry -
• Oil 2 to 3 tbsp
• 1 to 2 cardmoms
• 1/2" cinnamon bark
• 2 to 3 cloves
• 5 to 6 peppercorns
• Onion chopped finely 1 large
• Butter 3 tbsp
• Tomatoes 2 large ones chopped
• Cashews 10 to 12 small ones
• Kashmiri red chilly powder 3 tsp
• Garam masala powder 1/2 tsp
• Garlic chopped or garlic minced 2 tbsp
• Dried fenugreek leaves (methi)
• Coriander leaves or cilantro
• 2 tbsp of cream
Directions::
Marination -
- Marinate the chicken with everything from "for marinade" and keep aside for 30 minutes.
Frying chicken pieces -
- Heat oil in a pan and fry chicken pieces until they are golden brown and cooked.
- Once chicken is cooked, transfer to another bowl and use the same pan to make curry.
Making butter chicken curry -
- In the same pan, add oil, add all whole spices(cloves, cardmom, cinnamon bark and peppercorns), chopped onion and butter(2 tbsp). Saute everything well.
- Next, add cut tomatoes and cashews. Mix well.
- Add red chilly powder (1 tsp) and Garam masala. Mix everything well. Add salt as needed. Saute and Cook for few minutes (around 5 minutes).
- Now, next blend the tomato cashew mixture (I blended in a mixer).
- In the same pan(I quickly washed it before using it for final steps), add 1 tbsp of butter and add tomato cashew paste.
- At this stage, we can add cream if we want (optional).
- Next, Add red chilly powder(2 tsp). And finally, add fried chicken pieces. Cook it for few minutes.
- Sprinkle with dried fenugreek leaves and garnish with cilantro or coriander leaves. Pour cream on top of the curry at the end.
- Butter chicken is ready! Serve with naan, rice or rotis.
