Aloo Palak (Spinach and Potato curry)

Exploring north Indian cuisine these days, and aloo palak is my favorite!

Recipe:

Ingredients::

• Spinach 2 cups

• Potato 1 large

• Oil

• Mustard seeds 1 tsp

• Onion 1 medium chopped finely

• Kashmiri red chilly powder 2 tsp

• Garam masala 2 tsp

• Turmeric powder 1 tsp

• Cumin powder 1 tsp

• Ginger garlic paste 2 tsp

• Green chillies chopped 1 tsp

• Salt as needed

• Dried red chillies

Directions::

  1. Keep aside washed and cut spinach.
  2. Cut potato into cubes and keep it aside.
  3. In a pan, heat oil and pop mustard seeds.
  4. Add chopped onion and let it saute for few minutes.
  5. Add the dry spices, Kashmiri red chilly powder, turmeric powder and Garam masala.
  6. Now, add potato to the masala and let it cook for 8 to 10 minutes until potato is soft and cooked (cook covered and in low flame). We can also boil potato separately (in microwave, high for 6 minutes) but should be only 3/4 cooked. If boiled separately,  add potato and let it saute for few minutes only, may be 2 minutes.
  7. Add ginger garlic paste and green chillies and mix well.
  8. Add spinach next and cook spinach after covering.
  9. Add salt as needed
  10. Finally, Temper dried red chillies and add it to aloo palak.
  11. Yummy Aloo palak is ready. Serve hot with rotis and naan.
