We use to eat kulcha naan(indian flatbread) from one of our local Indian store and it use to be awesome so wanted to try out at home. Most of the online recipes are made with plain flour/maida so I tried with whole wheat flour and it turned out better! So, these kulchas look more like parathas but easy to make at home and still can enjoy restaurant style kulcha taste. I wanted to share this recipe in case you would like to try out something different than parathas and naan!

Ingredients:::

• 2 to 3 cup whole wheat

• 1/4 cup yogurt

• 1 cup milk

• 1 tbsp sugar

• Cilantro or coriander leaves

• 1/2 potato boiled and crumbled

• 1/2 onion finely chopped

• 1 tsp green chillies chopped

• 1 tsp red chilly powder

• 1 tsp Garam masala

• 1/3 cup thin Poha or flattened rice (aval)

• Salt as needed

• Water

Directions:::

  1. In a bowl, mix whole wheat, yogurt, milk. Sugar and salt and required water and make dough. Knead it thoroughly to make a smooth dough.

  2. Cover with an aluminium foil and Keep it aside for 1 to 2 hours.

  3. Now, prepare fillings for kulcha.

  4. Aloo filling....boil 1/2 potato and crumble them. Heat a pan with 1 tsp oil, and add the crumbled potato,  1/2 tsp red chilly powder and 1/2 tsp Garam masala. Add salt as needed. Saute it, garnish with cilantro and keep it aside.

  5. Onion filling......heat oil in a pan,  add finely chopped onion, saute for few minutes.  Add green chillies.  Add salt as needed. Add 1/2 tsp Garam masala, 1/2 tsp red chilly  powder. Now, add poha or flattened rice and mix everything. Let it cook for few minutes. Keep it aside.

  6. Now, let's start making kulcha.....in the chappathi/roti maker, make a ball out of the dough and start rolling them (as in video)

  7. Once rolled half way, add the potato filling and fold it and roll again like rotis as shown in video. Sprinkle with cilantro leaves on top of rolled kulchas.

  8. Roast kulcha on a pan and add little bit ghee on both sides. Aloo kulcha is ready!

  9. Perform steps 6 to 8 for remaining dough balls. In case of onion kulcha, add onion filling we prepared and repeat steps 6 to 8. In case of plain kulcha, knead the dough with chopped cilantro and repeat steps 6 to 8.

  10. Tasty kulchas are ready and you can eat it with raita, pickle or any Indian curries!
