Aviyal is one of my favorite south indian vegetarian curry. Basically, aviyal means, a mixture of vegetables, coconut paste and yogurt along with coconut oil and curry leaves garnished at the end. This curry is so much flavourful with all the veggies, coconut and yogurt, u will love it once you taste it. I make it in a slightly different way, little bit watery as me and my husband love it that way as it is eaten with rice mostly.
Below is the full Recipe & Ingredients::
1/2 cup carrot chopped
1/2 cup long beans chopped
1 cup yam pieces
1 cup cut drumsticks
1 cup fresh coconut (I use frozen coconut, only defrosting the required amount)
2 tsp cumin seeds
2 tsp green chillies chopped
Salt as needed
1/4 to 1/2 cup yogurt(not too thick)
Curry leaves
2 tbsp of coconut oil
**** In a pressure cooker, boil all vegetables together - carrots, beans, yam and drumsticks. If you get frozen aviyal mix in local Indian store, that can be used.
**** Grind coconut, cumin seeds, green chillies and little bit water until a thick consistency (don't make it too smooth)
**** Add the grinded coconut to the vegetable mix in cooker and let it boil for few minutes.
**** add yogurt, stir for 1 minute....and add curry leaves, and coconut oil and off the stove
**** our aviyal is ready to server with hot rice!
