Everyone would have a to-go indian recipe, this is mine (from my mom) to eat with rotis and/or rice. It has the yumminess of both spinach and lentils, I feel this is the most easiest recipe for me that I can make for a quick lunch or dinner. Can you all share your recipes that you so with spinach and lentils? If you add something more, less or almost similar to mine! I would love to make improvements to my recipe.

Spinach dal -
2 cups of spinach - washed and chopped 1 cup of pigeon peas lentils 2 tsp ginger garlic paste 1 tsp turmeric powder 1 tsp red chilly powder 1/2 tsp Garam masala 1/2 tsp coriander powder Salt as needed Curry leaves(optional) 1 tsp cumin seeds 1 tsp mustard seeds 1 chopped onion 2 dried red chillies Oil
Preparation::
**** In a pressure cooker, boil pigeon peas lentils with enough water that daal is immersed inside. Give it 2 to 3 whistles on medium flame.
**** Once lentils are cooked, add all the chopped spinach and give it one whistle in high flame.
**** In a pan, heat oil and add mustard seeds, cumin seeds. Add dried red chillies and curry leaves.
**** Once cumin seeds popped, add onion and saute. Add ginger garlic paste and mix well. Saute for few minutes.
**** Mix all dry spices...turmeric, red chilly powder, coriander , garam masala to the pan.
**** after few minutes, add boiled lentils and spinach to the pan and cook for few minutes.
**** a simple spinach daal is ready. Garnish with cilantro!
