Jalebi/Jilebi is an Indian sweet made with plain flour, soaked in sugary syrup! Sometimes too much sweet but it's so delicious...i love it once in a while!

Homemade Jilebis

Here is a recipe to make it quickly at home:

Preparation:

4 tbsp plain flour

1/2 tbsp rice powder or corn powder for crispiness

1 tbsp plain yogurt

a pinch of turmeric powder or you can add food color (red or yellow for the color) - I used turmeric powder.

***** Mix all above ingredients and add some water and make a batter. Batter consistency should be little bit watery consistency(smoothie consistency). Keep aside for 10 minutes. 

****** Now, let's make the sugar syrup....heat a pan and take 1 cup of sugar with 1/2 cup of water. Stir it thoroughly...let it boil on medium flame...once boiled, change it to low flame....until the sugar gets dissolved(around 5 minutes). Add few drops of lemon juice, also you can add cardmom powder(1/2 tsp max) to the syrup for flavour and food color or turmeric powder for color. Keep the sugar syrup aside and let's make jalebi/jilebi now.

***** Heat a pan for deep frying.....heat oil. Meanwhile,  add a pinch of baking soda to our jilebi batter. Use a piping tube (normally used for icing, just a small cut at the tip instead of using any icing tips ) or sauce(ketchup) bottles to make jilebi from the batter. I used zip lock and poured the batter, and made a small tip at the end.

***** Check if the oil is hot and start making jilebis....pour in round and round batter into hot oil in the jilebi shapes.  

***** Once each jilebi is ready, that instant move them to the sugar syrup and let it be in the syrup for 3 to 4 minutes. And then you can move it to a plate to be served! Top it off with any nuts if needed.
