We have no cardamom pods in my area and I'm making my own garam masala. Could you kind folks of r/indianfood please tell me if it's alright to omit the cardamom or if there are other great substitutes I can add? Also if it's not too much trouble. Can I also get the ratio needed to blend in the spices?
EDIT: [CURRENT SPICES I HAVE WITH ME RIGHT NOW]
- Nutmeg
- Cayenne Pepper
- Turmeric
- Coriander
- Cumin
- Cloves
- Cinnamon
( I also have mustard and garlic powder but that's for japanese curry, unless you guys also thing it's worth adding)
