Substitute for rice in biryani

Life changes are demanding that I eat less carbs. Giving up biryani is heart breaking.
What can I replace rice in biryani? I tried shredded cauliflower, it didn't soak up enough liquid. Quinoa's texture didn't feel right.
Any other ideas?
