I really wanted to try out jackfruit seeds, so I decided to try following a recipe online that said to boil the seeds for 10 mins, but they were still hard as rocks. I ended up throwing them into my instant pot for 30 mins (10 mins at first, then 20 more mins because they were still hard) and that made them edible, but they're still kinda tough. If I had to describe the texture, I'd say it reminds me of a slightly undercooked potato, technically pierceable by a fork, but not a pleasure to eat.
I'm wondering now if that's supposed to be their texture or if I did something wrong? I was really imagining them to be buttery soft like chestnuts, since that's how they are often described.
