What's a good simple sauce for general use?

What's a butter and/or tomato-based sauce that would go well with multiple types of dishes? I have a mortar and pestle, so I'd like to incorporate fresh spices, but I'd also like it to be something relatively simple to put together.

For instance, right now I have a bunch of leftover vegetables (carrots, peas, potatoes, cauliflower), some paneer, and I may pick up mutton to add to it, and I want to tie it all together with a tasty sauce that isn't from a can.

I'd say a simple Bhuna Sauce would do.

It's just slightly spiced tomato soup.

So, just cook up some onions, add some spices of your choosing, tomato puree, water, and blend it.

Make sure it's watery.
