Eating copperhead

Last night I went out frog gigging and came across a decent sized copperhead. I cut off his head immediately and skinned it later that night. Just wondering if anyone else has experience cooking and eating copperhead. I’d like to try it and not let the meat go to waste, just want to get insight so I don’t get sick. Thanks in advance
