Transplanting and overwintered plants

I tried my hand last season at overwintering 8 of our super hots. We're in the Northeast in the Hudson Valley of New York and and had multiple plants in the Scotch Bonnet, Reaper, Infinity, etc varieties last summer. They all did very well from seed but the season just isn't long enough here. We chose 8 to overwinter and all are doing well.

My question is about transplanting. I have a lot of experience and success with transplanting all sorts of vegetables and house plants but looking for advice regarding pot size and timing. These plants will find themselves in 25 gallon grow bags but I'm thinking there should be an intermediary pot size before that. I root washed, root trimmed, and repotted in six inch pots for the winter which they are still currently in and reacclimating to outdoor temps.
