Weight concerns at high speeds

Hi all, i’m trying to decide between a 300 and a 500 as my first bike, and something that concerns me are all of the instability claims i’ve heard about riders at higher speeds. I live near Dallas and basically every freeway/highway is 70 which means people are driving 80 on average. I’m already a light guy, about 150, and i’m concerned as a brand new rider that a 300 will be too light and i’ll just get tossed around by slipstreams and have a crash. Should i eat the cost and go for the 500 to be more stable? Any other skinny guys out there riding these things and feeling safe?
