I purchased two Samsung 32GB SODIMMs and successfully got them working in an Intel NUC that was advertised to only support 32 GB of memory. These memory chips are only $116 on Amazon right now.
This will allow 64GB of memory in most modern NUCS (within the past 2 years)
You can theoretically get a nice NUC with 64 GB of ram for under $1k right now.
These should work with any NUCs that have a 6th generation or greater Intel CPU. They also appear to work fine with Ryzen 3200u Notebook CPUs.
