Refinishing floors, what to do with baseboards?

Tomorrow we have a hardwood floor contractor coming to begin he process of refinishing our original 1930s hardwood floors. Heā€™s one of those guys that doesnā€™t seem to want to give any recommendations, just all the options. We still havenā€™t decided whether to replace or try to preserve the baseboards.

All baseboards are of the same style in the house. However, it appears to be a mixture of MDF and some other type of hardwood, redwood or mahogany. My guess is maybe 2-3 out of 5 rooms have original hardwood trim. That base has many layers of paint. Nothing ornate. Shoe molding everywhere. Plaster walls.

I have no emotional attachment to them, but I feel like some folks view the old stuff as ā€œexpensiveā€ and you should save what you can. But I just want it all to be clean and consistent.

One room had carpet so the base has to come off because itā€™s raised. 3 other sections are damaged and would require new runs (6-12ft sections). So I am replacing ~15% anyway.

Iā€™m not opposed to saving money either. Would removing just the shoe molding and refinishing up to the base be a smart choice? This could save money on trim, labor, and wall patching. But looking for all recommendations.
