Cold climate range hood venting

Hi, I live in Quebec province and have recently bought a house. There was no range hood because the stove was under the kitchen window. We want to move it to install a proper range hood. I'm trying to figure out how to do it but I can't figure out the best way to do it. Here's a plan of what it will looks like https://imgur.com/a/YGAUQ

Option #1, direct vent, cold air will enter so pretty bad

Option #2, vent through soffit, not recommended because of potential mold in attic

Option #3, vent through roof, so through the ceiling following the inside of the knee-wall. But it's the master bedroom up there.

Option #4, vent through joist, so try to find a way to direct the vent downward and probably insulate it along the way to be limit the duct lenght

What should I do, or any other way to do it?
