Need recs for counter tops.

I think we are leaning more towards wood countertops than quarts or granite.
If we went with wood, what should we do? Just buy a large slab?
Pic was taken before the fireplace insert was in. In the future we will be adding floating shelves and a mantle / surround 🙃 countertop ideas?
