Iskall, Xisuma and Tango, for several reasons in which I will go through.
They're all great builders and redstoners both, but one focuses on building, one focuses on redstone and one focuses on both equally.
Iskall has the best base on the server IMO and builds a lot of lore behind it, but he can still do a lot of technical things. Tango made the nether hub and a great castle, but primarily he builds farms. Xisuma focuses a bit on both.
With this setup, you get to see collabs in the two major groups.
Tango is a part of D.E.R.P, and Xisuma is part of the Logfellas. Both have integral roles in the community and allow you to get a better idea of what is happening in the broader HermitCraft world.
You get the owner of HermitCraft and the guy who is running most of the non-vanilla server projects.
Xisuma hosts the server, so his content could have announcements or something similar. Similar thing with Iskall, who has made the modded UHC, the HermitPack and Hermit Wars. Both of these players will also likely play in most events, including UHCs and secondary servers.

I disagree. Mumbo is essentially doing a single player series on an SMP server. I get the impression that his fanbase is much younger than the other hermits too, which comes across in his content.
See also the massive amounts of server lag the 'industrial district' has created, none of which was built for the community.
He's certainly a dedicated content creator, but not a 'server' player IYSWIM.
