How to determine superheat / subcool on a ducted air conditioner or mini split

Hey all I'm a first year apprentice In Australia. I mainly work with a tradesman doing commercial / residential installs so I'm a bit unfamiliar with the technicals and service side of the trade.

I'd love a broken down process on determine my subcool / superheat on a ducted air con or a mini split. I have analogue gauges and temperature probes just unsure how to go about it. I'm learning a bit at trade school but it seems almost entirely focused on the refrigeration side of things with accessible TXVs.
