Greek islands trip with 60+ year olds - any recommendations?

Traveling to Greece end of April with my mom and aunts who are 60 . They’re all mobile without wheelchairs or walkers, but can’t walk long distances or too many stairs, which I know will be a challenge in Greece.

We will be flying into Mykonos and ferrying to Santorini mid-week. Any recs for making the most of it? Day trips, other islands, hotels, areas of town, activities, etc is all very much appreciated!

Also - I know Mykonos isn’t the typical 60 crowd, but we are doing it anyway.
