Non Lucrative Visa renewal rejected. Was away from Spain for over 180 days due to Covid. How do I appeal?

My partner has had her NLV renewal rejected last week due to being out of the country for too long.

We were back in the US renting our house and both caught covid and had to cancel our flights back. She has asthma and took much longer to recover than we hoped so it was a month past the 180 days deadline before we got back here.

We provided all of the information for the renewal - rebooked flights, covid test etc but it was rejected right away.

She received a letter on Friday saying that she needs to leave within 15 days or appeal.

I am an EU citizen, she is Canadian but we are not married and have been together for 18 years.

Has anyone successfully appealed a NLV rejection or have any tips on how to successfully appeal given our situation?
