New to this malarkey. Variation in blood glucose readings - help!

So I can test and get a 7.1, then immediately test again and get a 4.9. Since my target for before a meal is 5.3 (I'm in the UK - it would be like getting 128 immediately followed by 88 using US measurements, I think), that makes the difference between comfortably under and seriously over! I'm washing my hands before testing and I'm not having to squeeze my finger to get a blood drop, so I think I'm doing everything right. What gives?
